To join in with the celebration of bacon tomorrow at the Bacon Fest at the Balloon Fiesta Park I decided to make a Bacon Breakfast Pie tomorrow!
Below is my recipe:
1 box of dehydrated hash browns
5 eggs
1 large tomato, chopped
1 small can hatch chopped chili
1/4 cup chopped onion
1/2 cup chopped broccoli
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheese
1/4 cup milk
1/4 cup butter, melted
10 slices thick cut bacon
*Preheat oven to 400
* Drain potatoes after softening them and spread out in a 9″ pie pan that has been sprayed with cooking spray. Brush melted butter over potatoes and pan in oven for 10 minutes to brown potatoes.
*Whisk the eggs, milk, salt, pepper together. Add the cheese, tomato, broccoli, onion and stir to combine.
*Pour the egg mixture over the potatoe crust. Bake for about 30 minutes or until firm. Remove the pie and increase oven temp. to 450.
*Weave the bacon into a latice on top of the pie, Brush with maple syrup.
*Cover the edges of the pie with foil to prevent burning. Note: The bacon will shrink so its fine that the bacon is hanging over the sides. Return the pie to the oven and bake for 10 more minutes
*Let the pie sit for 5 minutes before serving.
