Spring will be here before you know it! With spring comes warmer weather and aren’t we all ready for that? Are you ready to relax in the evening with a cup of warm tea to get you in the mood for sunnier days? We offer a variety of teas at the Downtown Historic Bed and Breakfast that come from the New Mexico Tea Company, my favorite being the Sleepy Time tea. This one is perfect for unwinding after a long day, or if you just feel like relaxing.
And what better way to enjoy a cup of tea than to pair it with a delectable scone like the British do. Try out our recipe below, we hope you love it!
Cream Scones:
Ingredients:
2 ½ cups flour
2 tsps. baking powder
1 teaspoon baking soda
½ cup sugar
1 stick butter
½ cup sour cream
½ cup heavy cream
1 large egg
Berries, nuts, dried fruit of chocolate pieces (optional)
Directions:
Preheat oven to 400 degrees.
Mix flour, baking powder, baking soda and sugar until well blended. Add in butter and blend well until crumbly. Mix in sour cream and egg. Pour heavy cream on top and blend together until dough just comes together. Mix in by hand any berries, nuts, dried fruit or chocolate pieces to suit your individual taste.
Flour surface and make a rounded ball of the dough. Cut into pie-shaped wedges and place on parchment. Brush tops with additional heavy cream and sprinkle with sugar. Bake in preheated oven for approximately 12-15 minutes until scones are golden brown and tops spring back lightly.
*This is a great basic scone recipe that can have additional ingredients added to it if you would like to change it up. A couple options I would recommend are to make a cranberry scone with orange zest, or make a cinnamon scone with cinnamon chips and powder.
